This spinach pesto takes 5 minutes to make and is an easy dip or addition to a meal! A great way to add vegetables to a dinner too!
I’m always looking for ways to get my family to eat more vegetables, and especially more greens! We love “sneaking” spinach & kale into most recipes with ground meat, and definitely smoothies! But this is a fun savory way to add more greens into your family’s meals.
Spinach pesto:
I’m not sure about you, but I LOVE a good pesto dish. The warm and savory flavors just make my mouth so happy!
This pesto is packed with greens, healthy fats AND protein. Win win win!
Also – it’s Paleo, vegan and Whole 30 approved!
Easy spinach pesto
Spinach pesto recipe that will take you 5 minutes to make, and can be used in a variety of dishes! A great way to add greens, healthy fats and protein into your family’s diet.
Ingredients
- 2 cups packed spinach (can sub kale too)
- 1/2 cup fresh basil leaves
- 1/3 cup olive oil
- 1/4 tsp salt
- 1 tsp minced garlic
- 1 lemon- juiced
- 1/2 cup cashews (can sub almonds too)
Instructions

Put all of the ingredients in the blender or food processor.

Pulse on low until everything is combined and at the desired consistency, stopping the blender and swiping down the sides with a spatula as necessary.

How to eat spinach pesto:
Now here’s some ideas of how to enjoy your spinach pesto:
- Spread it on a sandwich
- Dip veggies in it (I love cherry tomatoes!)
- Put over a pasta dish to add veggies
- Dip pieces of rotisserie chicken in it for a protein packed snack
- Put it on avocado toast
