This dill pickle chick pea salad is so flavorful, filled with vegetables and healthy fiber, and the perfect filling lunch recipe as the weather warms up!Jump to Recipe
I’ve been making versions of this chick pea salad for years. It is SO simple to put a larger batch together, and it holds up really well for lunches throughout the week. It’s truly the perfect meal prep food to keep you eating well through the week.
Whenever I share this as part of my lunch on my Instagram page, I get people asking me for the recipe. I typically don’t even measure it out – it’s a good “dump salad” for me. But I have taken the time to tweak and perfect this recipe – with the addition of dill pickles!!
