Dill pickle chick pea salad


  • 2 cans chick peas
  • 1 cup carrots (chopped)
  • 1 cup celery (chopped)
  • 1 cup dill pickles (chopped)
  • 1/4 cup red onion (chopped)
  • 1/4 cup stone ground dijon mustard *see notes
  • 1/4 cup vegan mayonaise
  • salt + pepper (to taste)


  1. Combine all the ingredients in a large bowl.

  2. Enjoy!

  3. Store in an airtight container in the refrigerator for up to 3-4 days.

Recipe Notes

*You can use regular dijon mustard, but the stoneground dijon gives it the perfect little kick of flavor - it's delicious!
