OK so let me preface this by saying – my kids BEG for pasta and we don’t eat it very often. It’s more of a splurge meal, and when I make pasta for dinner, I use it as an excuse to sneak some extra veggies in the dish! My kids devour this meal, and I’m pretty happy that they’re eating a good amount of spinach and tomatoes along with that pasta!

15 minute Caprese Ravioli:
A good ravioli is the base of this dish. I got mine at BJ’s, and actually got the tomato mozzarella flavor. However, almost any flavor of ravioli will work for this recipe! It’s very forgiving and completely delicious.

While the ravioli provides the base for this recipe, the spinach pesto gives it such great flavor. Bonus: it’s a great way to get extra greens into your family’s dinner! This pesto has TWO packed cups of spinach in it, and my kids love it!

Caprese Ravioli
This caprese ravioli dish is a HIT with kids and adults alike, but is secretly packed with veggies! This flavorful dish will come together in only 15 minutes, which makes it the perfect weeknight meal!
Ingredients
- 2 lbs ravioli
- 1 pint cherry or grape tomatoes (halved)
- 1 cup spinach pesto (recipe linked below)
- shredded parmesan cheese
Instructions

Boil ravioli per package directions – drain and set aside

While the ravioli is boiling, make the spinach pesto (recipe below)

Toss the ravioli in the pesto, and then top with sliced tomatoes

Sprinkle parmesan on top, serve and enjoy!
